This coconut garnish goes with just about any ice cream or sorbet flavor. Use it along with some chocolate sauce to dress up Coffee Meringues with candied ginger ice cream into a plated dessert.
Preheat the oven to 350°F. In a medium bowl, whisk together the egg white, sugar, salt, and vanilla extract until blended. Gently stir in the coconut. Spread the coconut in a single layer on a baking sheet.
