This coconut garnish goes with just about any ice cream or sorbet flavor. Use it along with some chocolate sauce to dress up Coffee Meringues with candied ginger ice cream into a plated dessert.


  • 1 large egg white
  • ¼ cup sugar
  • Large pinch of kosher salt
  • ½ teaspoon vanilla extract
  • 2 cups unsweetened flake coconut


Preheat the oven to 350°F. In a medium bowl, whisk together the egg white, sugar, salt, and vanilla extract until blended. Gently stir in the coconut. Spread the coconut in a single layer on a baking sheet. Bake for 8 minutes, then stir the coconut with a metal spatula. Continue to bake until golden brown, about 5 minutes.
