Nuts offer texture to an ice cream dessert. The contrast between the cook smooth, creamy ice cream and the crunchy nuts wakes up all your taste buds. Nuts also cut the richness of ice cream. Nut-flavored ice creams, like butter pecan or maple walnut, don’t offer the same contrast-the nuts need to be sprinkled on top of and around the dessert. Coating them with sugar and corn syrup and baking them makes them extra crunchy and a little bit sweet so they blend well with the dessert.
