What could be more comforting than good lentil soup? It has a special flavour all of its own and, simmered with a ham bone or piece of bacon, it is particularly good with pasta. Brown or green lentils have far more flavour than orange ones. The tart taste of sorrel goes well with the lentils and a handful, finely chopped and added before serving, is delicious in this soup, which is even better warmed up the next day.
