It isn’t only pizzas that benefit from mozzarella. In minutes the cheese melts into a creamy sauce for pasta. Capers and tomatoes add their flavour to make this dish a light but tasty treat.
Drop the tomatoes, one at a time, into a small saucepan of boiling water to cover. Leave for 5 seconds, remove with a slotted spoon and peel off the skin. Slice in half lengthways, squeeze out the seeds and discard. Chop the flesh into small dice, mix in a bowl with all the other ingredients except the pasta and season.
