The Alfredo who originated this lovely dish had a famous restaurant in Rome. A friend of mine claims to have seen him there in his magnificent chef’s hat, energetically tossing his noodles. This recipe is extremely easy to make but relies on the excellence of its ingredients. No substitutes for the parmesan here, and you must have just the right amount of sauce - the noodles should be coated but not swimming in it.
