I wonder what cooking would be like without onions? They add so much to all kinds of dishes and make the most sensational sauce. With long, slow cooking onions lose their strong taste and acquire a sweetness. This is a very economical dish as well as being a healthy and delicious one, and it has a real feel of Italian country cooking. I cook it for my family and friends on informal occasions.
