This recipe is named in honour of the wife of a carter who travelled every day with his donkey to Rome from the countryside, laden with wine, fruit and vegetables. The speed and economy of this dish fitted in with his simple life. The toasted breadcrumbs in this recipe add a delicious and unexpectedly nutty flavour-a real Sunday evening favourite in my family.
