The Italian friend who introduced me to this dish writes: ‘All my cooking is based on garlic: strengthens the stomach, helps the digestion, good for the waterworks!’ I can’t vouch for the truth of these claims but I do know that this sauce is delicious. Fresh basil combines wonderfully with tomatoes, but if you can’t find any use fresh chives or parsley.
