You could think of this as a lively Italian cousin to the English prawn cocktail. I make it as a first course-it’s a stimulating start to a party meal and always popular.
First make the spicy tomato sauce. Then, cook the pasta ‘al dente’. When it is nearly cooked, add the prawns to the tomato sauce and heat together just long enough to make the prawns hot. Taste for seasoning.
Drain the pasta and put in a warmed serving bowl (do not overdrain - there should be some water left in it). Pour the sauce over and sprinkle with the fresh herbs. Serve immediatel
