The concentrated smoky flavour of cod’s roe makes an excellent sauce for the more neutral pasta. It is very quick to make and very good.


  • 5 oz (150 g) smoked cod’s roe

Scrape out the soft inside of the roe and discard the skin. Place the roe, oil and garlic in a blender or food processor and purée. Add the cream and process just enough to make a smooth paste.
