Method

In a large saucepan bring the stock to the boil. Drop in the cappelletti and boil until tender. Stir occasionally, very gently, to prevent sticking. The cappelletti will take about 10-15 minutes to become ‘al dente’. Serve in soup bowls with the grated cheese passed round separately.
