Cime di rapa are the green tops of turnips, a vegetable regrettably not often eaten in this country. Ordinary greens are a good substitute because they have a similar delicious bitterness. Greens are cheap and always fresh, so try them, as here, in a different way from the usual.
If you can, buy a good pecorino cheese for grating; it is more suitable than parmesan for this dish from southern Italy.
