Garganelli are a kind of home-made pasta from Romagna in northern Italy. They are similar in shape to penne but, being home-made, they are different in flavour. In this recipe they come with a sauce made with seafood and mushrooms, hence its Italian name, which means ‘sea and mountains’.

  • 20 g (¾ oz) dried porcini

  1. Soak the porcini in very hot water for 1 hour.
  2. Drain, reserving the liquid, and rinse the porcini under cold water. Dry them thoroughly and slice the larger ones. Filter the porcini liquid through a sieve lined with muslin and reserve it.
