A chitarra - guitar – is a special tool used for making square spaghetti in Abruzzi, a region east of Rome. The sauce in this dish is based on lamb, a popular local meat, cooked in a very piquant tomato sauce.

Ingredients

  • 6 tablespoons olive oil
  • 500 g (1 lb) lamb fillets, cut into small

Method

  1. Heat 2 tablespoons of the oil in a saucepan. Add the meat and fry on all sides until brown. Lift the meat out with a slotted spoon and set aside.
