  • 7 tablespoons extra-virgin olive oil
  • 4 garlic cloves, chopped very finely
  • 2-3 dried chillies


  1. Heat the oil in a large frying-pan and fry the garlic, chillies and parsley until the garlic just begins to brown. Do not let the garlic burn, or it will acquire a bitter flavour. Add salt to taste.
  2. Meanwhile, cook the pasta according to pack instructions, until al dente.
