This creamy sauce should be made with very fresh vegetables, preferably in full season.

Ingredients

  • 1 garlic clove, sliced very finely
  • 6 tablespoons olive oil
  • ½ aubergine, peeled and

Method

  1. Fry the garlic in 4 tablespoons of the oil in a saucepan for about 2 minutes, until it is just coloured. Add the aubergine, courgettes and pepper and fry gently for 5 minutes, stirring frequently. Add the tomatoes, salt and pepper and cook over moderate heat for 1 hour, stirring
