A ragù is a meat sauce for pasta. The most popular ragù is what is known in English as bolognese sauce, made with minced beef tomatoes and all the usual flavourings. My recipe here is a less common ragù that I heartily recommend.

You can buy excellent sausages nowadays. Choose coarse-ground sausages with at least 80% pork meat, and not too herby or spicy.
