The English vegetable whose flavour is nearest to an Italian pumpkin is a butternut squash, which has the right balance of sweetness with that elusive flavour of squashes and pumpkins. Mixed with good ham, butternut squash takes on a rather smoky, porky taste which is most palatable, while it envelopes the ham with its sweet purée. A harmonious combination of flavours.
