Paglia e fieno means ‘straw and hay’, because of the combination of yellow and green noodles. It is an attractive pasta, as well as being very tasty, but it needs care in the cooking. Being very thin, paglia e fieno cooks very quickly, tends to stick together and dries out quickly. It needs to be dressed with a lovely liquid sauce and to be tossed with two forks, to separate the strands.
