This is a quick and easy summer salad that I first had in a simple restaurant at Villasmundo, a town in Sicily between Catania and Siracusa. It exploits the freshness of the seasonal basil and tomato, and it gives them a little kick with the resinous flavour of pine kernels. I originally tried it as a hot dish, as it was served in Villasmundo, but I found the cold leftovers so irresistible that I suggest you serve it as a salad.
