Because pasta is usually associated with savoury flavours, you might be surprised at the idea of a pasta pudding. But this is a good, authentic Italian dish that has been made in Umbria for hundreds of years. The pasta used is capelli d’angelo or ‘angel’s hair pasta, usually known as capellini.

  1. Melt the chocolate in a bain-marie or a heatproof bowl placed over a pan of very gently simmering water. Mix in the cream and sugar.
