There are many brands of passata now on the market, ranging in price and quality but you can make your own passata when you have a glut of tomatoes in your garden or even just when you feel like it.

If you make passata with greenhouse tomatoes, or have any doubt about their flavour, add 1 teaspoon of concentrated tomato purée to give the passata more flavour.
