This is a slight variation on my favourite, Sweet Pastry Dough, and is just as easy to prepare and use. I like alkalised (Dutch-process) cocoa powder best for this because it has a more chocolatey colour and delicate flavour than natural cocoa. Follow the instructions in the Sweet Pastry Dough recipe if you want to mix by hand or in a stand mixer.
