My dear friend Ann Amendolara Nurse shared this recipe that she used to make every autumn when McIntosh apples are in season (see note). The original calls for sweetened condensed milk, but I’ve changed it to use a combination of cream and both white and brown sugars.

  1. Set racks in the lowest level and upper third of the oven and preheat to 180°C/gas mark 4.
  2. For the filling, whisk the eggs in a bowl until frothy, then whisk in the applesauce.
  3. Whisk in the lemon zest, juice, cream, sugars and cinnamon.
