I first heard of this pie when Bennie Sue Dupy, a native of Mart, Texas, near Waco, shared its recipe, suggesting that it would also make a good bar cookie. I did adapt the recipe for my cookie book - and now here it is in its original form. Many versions of this pie - also referred to as Raisin Pecan Chess Pie - have vinegar as a flavouring. I’ve decided to use gentler lemon juice instead and it certainly brightens the flavour of this quite sweet filling.
