Chess pies are a classic dessert of the American South, though they have nothing to do with the board game that goes by the same name. Chess may be a corruption of ‘cheese’, since in the distant past, any kind of a mixture that jelled or coagulated was considered a type of cheese. This version comes from my friend Ben Mims, formerly the baking expert of the Saveur magazine test kitchen. Recipes for chess pie
