Though I love pumpkin pie, I have to admit that lately I’ve just got tired of using tasteless tinned pumpkin. A couple of years ago, I tried substituting baked, mashed sweet potatoes for the pumpkin in my favourite recipe and I was more than happy with the results. Baked winter squash, such as butternut or acorn, works just as well. Serve with lightly sweetened whipped cream.
