A tablespoon of grated fresh ginger enlivens the filling of this peach pie. Use only really ripe height-of-summer peaches to make this. Less ripe peaches lack the flavour necessary for a good filling and are also a nightmare to peel. This is a perfect pie for a crumb topping, especially when you use my improved method for applying it: I often noticed that the bottom of the crumbs added in the usual way had a layer of wet and unbaked flour where they had absorbed moisture from the filling.
