Apple pie served with Cheddar cheese is a New England classic, so why not combine them right in the pie filling? My favourite apples for a pie are Northern Spies, but they’re available only in the fall and early winter, and mostly in the northeastern United States. Failing that, I think a combination of two-thirds Golden Delicious and one-third other crunchy tart dessert apples perfectly combines sweet and tart with firm and juicy.
