The German word Plunder can refer to stacked planks or beams of wood, which is how the term came to be applied to a laminated pastry dough. Recently, I visited with my old friend Hans Diglas, proprietor of Café Diglas and Konditorei Diglas in Vienna. Herr Diglas gave me some pastries made with plunderteig, and I was an immediate convert. Over the following several days, I spent some time at his production facility and this recipe is the result.</
