It’s a mystery why this is referred to as a/Napoleon’ in the United States and UK, though the best explanation is that it has nothing to do with the French emperor but is a corruption of the word Neapolitan. in any case, this version of a mille-feuille combines the simple elements of crisp, buttery caramelised puff pastry layers and pastry cream perfumed with vanilla pod and lightened with whipped cream. It’s definitely a case where the whole is much greater t
