This versatile dough is tender and buttery, but is always meant to surround a filling, whether as individual pastries like the Walnut Bows and Poppy Seed Crescents or a large Walnut Strudel, all of which appear later in this chapter, Beugel is the German word for bow, as in bow and arrow. The Poppy Seed Crescents resemble the wood handle of the bow, while the Walnut Bows are made to somewhat resemble the bowstring after it’s pulled to shooting position.
