This is really a subdivision of pasta cookery, but it is included in this book because crespelle (crepes) are often used in recipes that call for either lasagne or cannelloni. You should not confuse crespelle with sweet crepes, pancakes, palacinky, and blintzes, all of which would not suit our needs here. About the only match are Russian blini, which are closer to scripelle (to be discussed later) than to traditional crespelle.
