This is the most basic sauce imaginable. You may use it to lend tomato flavor to other dishes or, if you have excellent tomatoes, to eat as a spaghetti sauce with a bit of grated cheese. Note that this sauce has no fats. An average portion contains about 35 calories.

Ingredients

  • 2 pounds fresh or canned tomatoes
  • Pinch of salt (optional)

Method

If you are using fresh tomatoes, peel and remove their seeds as indicated. Pass the tomatoes through a sieve or strainer, or puree quickly in a blender. Add the salt and heat the tomatoes in a saucepan over a moderately high flame for 1 hour, stirring occasionally. The sauce should condense significantly.
