An easy, delicious sauce if you have fresh mint.
Set a large pot of cold water to boil. Mince the garlic and 1 sprig of mint. Heat the tomatoes in a saucepan, gently breaking them up with a fork or wooden spoon. Add the garlic and mint. Cook for 5 minutes. At this point the water should be boiling. Toss in a pinch of salt, let come to boil again, and then start cooking the pasta. Keep stirring the sauce. When the pasta is al dente, drain well
