I refer to this dish as “spaghetti without salad” because the sauce is actually a simple salad dressing. There are no greens in sight, though you may change that if you consult the variations listed below. This dish is fast, easy, and delicious. Use the best oil you can find.

Ingredients

  • 4 ounces spaghetti
  • 3 tablespoons extra-virgin olive oil
  • Juice of

Method

Set a large pot of fresh water to boil. When it reaches a boil, toss in a pinch of salt. Wait 1 minute, then add the spaghetti.

While the pasta is cooking, prepare the other ingredients. When the pasta is al dente, drain thoroughly and transfer to a bowl. Pour on the oil with one hand as you squeeze or pour the lemon juice with the other. Grind in the pepper, sprinkle on the garlic sliv
