Pasta with Salmon and Fontina Cheese

This recipe was given to me by Giulietta Simionato, the great mezzo-soprano from Forlì, in Romagna. Madame Simionato has recorded many of her finest roles, including Amneris in Aida, Ulrica in Un Ballo in Maschera, Azucena in II Trovatore, Rosina in II Barbiere di Siviglia, and as La Cenerentola. I also love her rendition of “Anything You Can Do” from Annie Get Your Gun, recorded with Ettore Bastianini and accompanied by Herbert von Karajan<
