Bigoli, also called bigoi, are a specialty of Venice and the Veneto and are unusual for two reasons: They are made of whole wheat and are the longest of all pasta, as much as 15 inches long. Bigoli are otherwise similar to spaghetti, so if you have an attachment on your pasta machine to cut spaghetti, you can make bigoli as well.
