This is the basic recipe for potato gnocchi. They can be served with many types of sauces, so be creative and experimental. In Naples potato gnocchi served with meat sauce are called Strangolapreti (the priest strangler) because of their effect on one cleric who loved them so. Fear not, just remember to chew.
I first tasted gnocchi alla bava while on a skiing trip in Courmayeur, a sunny community on the French border at the foot of Mont Blanc. Bava means floss or silk
