Corzetti are one of the classic pastas of the Ligurian kitchen. I sampled this dish in Moneglia, a seaside town on the border between the provinces of Genoa and La Spezia in an area filled with olive groves. Felice Romani, a Genoese who produced some of the most important libretti in Italian opera, died in Moneglia in 1865 at the age of 77.
