This is the classic pasta sauce of Genoa. Many Italians consider it the finest sauce of all. There are many variations, some of which are listed below, but the traditional ingredients are fresh basil, Sardinian pecorino cheese, Ligurian olive oil, and garlic. Pesto may be served with Ravioli alla Ricotta, spaghetti, trenette, bavette, or gnocchi. Pesto also is excellent in lasagne, and when stirred into vegetable soup makes Minestrone alla Genovese.
