I devised this sauce for those who want the richness of besciamella but still want to watch calories. Please understand that this is not the classic version of the sauce, but it is an acceptable substitute. You may use this for a Salsa Aurora with a clear conscience. When combining with heavier sauces, the besciamella will lend some richness and will benefit from the fats in the other sauces.
