This easy and delicious recipe was given to me by Ezio Salsini, proprietor of the Taverna alle Tre Frecce in Bologna. Signor Salsini is typically Bolognese: warm and expansive, enamored of good food, fine company, and high spirits. His restaurant specializes in the traditional dishes of Emilia-Romagna and dabbles in cucina nuova but is always mindful of the great gastronomic tradition of this region.
