Most of the dishes I have chosen for this book are healthy and sane, good for you and fine to eat at any time. But here is a dish that is wickedly delicious, much too fattening to comprehend, and yet ideal for a once-in-a-great-while special treat. Read about mascarpone. I have found, through much too frequent sampling, that the pastas most suited to this sauce are gnocchi and large maccheroni.
