I wonder if Giuseppe Verdi ever had a chance to try these luscious paste ripiene named in his honor. What music would he have been inspired to write as a result? These caramelle (in Italian this means hard candy more than a chewy caramel) are prepared by Carlo Bergonzi, the tenor whose recipe for spinach gnocchi appears.
