I sampled this sauce in Perugia, a town where excellent pork is found. The great nineteenth-century contralto, Marietta Alboni, was bom in nearby Città di Castello. She studied with Rossini, in whose operas she excelled. Alboni was famous throughout Europe for her portrayals in II Barbiere di Siviglia, La Cenerentola, La Gazza Ladra and Semiramide.
