If any soprano had trouble getting into character before going onstage to sing a mad scene, a bowlful of Penne all’Arrabbiata would put the requisite fire in her belly. This is real hot stuff as only the Romans could make it. How angry a sauce you make depends on your own taste, so vary the amount of peperoncino accordingly. Nowadays, cooks often add ham, mushrooms, peas, and even cheese to this sauce, but I recommend the classic preparation. Use pepper flakes only if absolutely necessary.<
