Garganelli with Coconut Spice Sauce (Inspired by Rendang)

Hand-rolled pasta tubes tossed in a fragrant coconut sauce, inspired by the bold, warming spices of Southeast Asian rendang. Years ago in Singapore, I stumbled on a small Italian place near my office serving spaghetti with a rendang-style sauce. I loved it from the get-go: the coconut, the slow-cooked flavours, the heat, the way the sauce coated the pasta. I went home and tried to recreate it using a store-bought rendang paste, available everywhere in Singapore, and it just worked. I’ve mad
