The fougasse and its distinctive leaf shape are closely associated with the Provence region in the South of France. There are many different regional variations, such as fouace or the Italian focaccia. The fougasse was originally the first piece of dough baked in the wood burning ovens of a bakery and was used to gauge the heat of the oven. It was then served as a morning snack for the apprentice bakers.
