Gâteau Basque

Originating from the town of Cambo-les-Bains in the Aquitaine region of France, gâteau Basque was first sold under the Basque name Biskotxak. The anecdotal history of the gâteau is that a baker by the name of Marianne Hirigoyen had been handed down the recipe by her mother in the 1830s. With the growing fame of Cambo-les-Bains as a spa town, well-to-do people from all over France started coming into Marianne’s shop to sample the unique delicacy of Biskotxak.
